Genius Gluten-Free Veggie Wraps: Review

Let's face it, we're all pretty strapped for time so when it comes to quick, easy and healthy lunches, I'm totally down for that. But, it can be very easy to get into a bit of a lunch-time rut. I know for one that I tend to go for the same thing every lunch time and although that may be quick and convenient, it's not the most thrilling. So, I was super excited to try Genius Gluten Free's new veggie wraps and before I even tried them I was already pretty impressed and I'll tell you why...

1. Gluten Free wraps - Yes please! If I have a sandwich for lunch I'm usually left feeling a little heavy and bloated which doesn't help when you've got a busy afternoon planned.
2. They are made with real veg. Well, thank you Genius you absolute *ahem* Geniuses for helping me get more of veggies into my diet.
3. Just look at that vibrant colour - If that doesn't entice you then I'm not sure what will.

Here's what I made using the Beetroot Wrap but I'm absolutely positive it would've been just as tasty with the Kale Wrap too.

What you'll need:

- x1 Genius Gluten Free Fibre Fest Beetroot Wrap 
- A big dollop of hummus
- Some fresh spinach leaves (a big handful should do it)
- Halloumi
- Coriander (dry or fresh, up to you but I used dry on this occasion as I didn't have any fresh)

How to make:

- Quite simply slice up some big ol chunks of halloumi and add into a hot frying pan and allow to cook on each side for a minute or 2 or until nice and golden (watch it carefully otherwise it'll get burnt or stick to the pan)
- Take a Genius Beetroot Wrap (hot or cold - I popped mine in the microwave for a few seconds so it softened a little) and add a big dollop of hummus then spread over the wrap, add on the spinach and top with the hot halloumi pieces. Sprinkle with some coriander, wrap it all up nice and tight, slice in half and there you go.

Made in a matter of minutes, super healthy and absolutely delicious. This would be a great one to prep the night before you head off to work - Just wrap in some foil to keep it fresh and tasty.
