Genius Gluten Free Pasta: Review

Pasta is one of my go-to's and if I could have it for dinner every night I totally would... sometimes I do (don't tell anyone I said that). But, I do sometimes find that it can sit a little funny in the tum. So, I'm trying Genius Gluten Free's latest pasta products out by bringing you this quick and easy recipe.

What you'll need:
Genius Gluten Protein Punch Pasta (Penne)
- 1 tbsp tomato puree
- 1 tbsp creme fraiche / coconut yoghurt if dairy free
- Chopped fresh cherry tomatoes (I used a variety of colours for different flavours)
- Cherry Tomatoes (on the vine - to roast)
- Olives
- Olive Oil
- Fresh chopped basil
- Hemp hearts (optional - I used Good Hemp)
- Seasoning - Salt & Pepper

How to make:

> Start by boiling some water and cooking the pasta for about 5-6 minutes (depending on how you like it - personally I like it slightly aldante). Personally I use the whole box in one go (don't judge) but you can split for 2 servings. It is quite filling so you can always have some as leftovers - it's great cold too.
> Whilst the pasta cooks, pop some cherry tomatoes into the over at 180 fan with a little oil and roast for about 10-12 minutes.
> Once the pasta is cooked, drain the water and place back into the saucepan. Add in the creme fraiche and tomato puree and mix together.
>Then simply add in the roasted cherry tomatoes, chopped tomatoes, chopped olives, chopped basil, seasoning and a drizzle of olive oil. I like to add some hemp seeds / hearts to this dish too as it gives it a nice texture and a nutty flavour.
