Carrot Cake Porridge

What better way to start the day than with a big bowl of porridge? Personally it's a classic breakfast for me and one I make on the regular but sometimes it can get a bit repetitive (especially if you're adding the same toppings each time). I thought I'd try something new and considering I now have a guaranteed bag of carrots in the fridge (Dudley's favourite thing ever... no really!) I thought I'd see what the fuss was all about and whack it in my breaki bowl. It's a great way to get some hidden veg into your breakfast and it's 1 of your 5 a day so that's a pretty good start...

What you'll need:
- 150g Porridge oats
- 1 large carrot (grated)
- 200ml of choice of nut milk (I used oat)
- 1tsp cinnamon powder
- 25g Raisins
- Dollop of coconut yogurt
- 1tsp Chia Seeds
- Drizzle Agave nectar
- Chopped walnuts

How to make:
> Place the oats, milk and cinnamon powder in a large pan and simmer on a low heat for around 2 minutes. Make sure you give it a stir every so often so it doesn't stick.
> Add in the grated carrot and stir, leave to simmer for a further minute whilst stirring.
> Once all cooked, place into a bowl and add your toppings.
> Add a dollop of coconut yogurt, sprinkle some chia seeds, walnut pieces and chia seeds then drizzle with some agave nectar.

That should set you up rather nicely for the day ahead, especially if it's a chilly start to the day.
You could make this the night before as an overnight oats version. Just add all the ingredients into a jar or covered bowl and place in the fridge instead of heating.
