Stir fry is such an easy go-to option for me! Usually piled high with veggies and sometimes some chicken pieces. This one has got to be one of my favourites so far, so I had to share it (obvs!).
I think it was possibly the noodles that made this dish for me, I used Clearspring's Udon Noodles - which take just a few minutes to cook and had the most delicious taste. Hard to describe what it is exactly about these noodles that make them special but trust me on this one - Give them a go next time you make a stir-fry ;)
Essentially, you can put whatever you fancy in this recipe (that's the beauty of a stir-fry!) but here's what I used:
What you'll need:
-1 Red pepper
-Shiitake mushrooms (1 punnet)
-1 Small carrot
-Fresh coriander
-Cashew nuts (chopped)
-Sesame seeds
How to make:
>Start by cooking the Udon noodles in a saucepan of boiling water for around 6-8 minutes, until softened.
>Slice up the pepper and carrot into strips
>In a large frying pan or wok add a splash of oil, followed by the pepper & carrot strips and the mushrooms.
>Fry on a low heat until softened.
>Add in the noodles along with some Tamari Soya Sauce and mix together.
>Allow to cook for around 5 minutes.
>Add in a sprinkling of sesame seeds.
>Chop up some fresh coriander, & crush a handful of cashew nuts.
>Serve the noodles in a bowl, sprinkle over the coriander, cashew nuts and some extra sesame seeds and tuck in!
Perfect for a healthy, quick and easy dinner. Also great for making in batches to take left-overs into work for lunch the next day.
