Gluten-Free Indulgent Dark Chocolate & Pistachio Brownies

These are my go-to brownies whenever I have a brownie craving (it happens more often than you might think!) So, I hope you love these as much as I do. Go on, give 'em a try!
What you'll need:

-250g Unsalted butter, melted
-200g Dark chocolate (I use 70% Green & Blacks) chopped into pieces
-70g Coconut flour (I use Biona)
-1tsp Baking powder (gf)
-1tsp Sea salt
-80g Cacao powder
-4 Large eggs
-360g Caster sugar
-100g Pistachios (chopped)

How to make:
Pre-heat your oven to 180 fan.

>Start by melting the butter in a saucepan over a low heat. Stir gently until the butter has completely melted. Then remove from the heat and add in the chocolate pieces. Stir until the chocolate has completely melted and combined.

>Place the coconut flour, cocao powder, baking powder and salt in a bowl and mix together until combined.

>Place the eggs in the bowl of a mixer (with a whisk fitted) and beat until light and fluffy. Add in the sugar bit by bit and continue to whisk together until incorporated.

>Gradually add in the melted chocolate and butter mixture to the eggs and keep whisking.

>Remove the whisk and gently fold in the coconut flour, followed by the pistachios (but not all at once, save some to sprinkle over the top)

>Spoon the mixture into a lined 20cm square tin and bake in the oven for around 20-25 minutes. The middle will be all gooey and squidgey.

>Allow to cool for a few minutes before serving. Best served warm with a little dollop of cream or ice-cream.
