Green Shakshuka



I made this Green Shakshuka one morning to help use up some greens I had left over in my fridge so it's really easy to just throw together but it's also tasty and seriously healthy - All those greens just do the world of good. Although this is more of an idea than a full on recipe, I just had to share it with you all.


I love Shakshuka and have made many of my own versions before as well as eating them out when going for Brunch but I sometimes find eating the original Shakshuka can be quite heavy and the tomato's included in the dish are quite acidic and don't sit all that well with my stomach (each to their own).

What you'll need:

- 2 large eggs
- 1 small courgette
- A handful of spinach leaves
- About a cup of a peas (frozen is fine)
- Pea shoots
- Hemp hearts (I use Good Hemp)
- Salt & Pepper to season

How to make:

> Heat a small pan with a little oil (coconut, rapeseed or other)
> Chop the courgette into small pieces then add to the pan to sautee for around 2-3 mins
> Add in the peas and spinach and allow to sautee for around 4 mins
> Make 2 wells then crack in the eggs and allow to cook until the whites have cooked. Use a pan lid to cover to help with the cooking process. Covering for a minute or so will help to steam or poach the tops
> Once cooked, top with some pea shoots and a sprinkling of hemp hearts and seasoning

Eat straight out the pan or serve up on the table along with some slices of toast.
