Banana Pancakes


So, it's that time of year again already! No, not Christmas, we've just had that one... PANCAKE DAY! Sharing my delicious gluten free American style banana pancakes with coconut yoghurt and stewed blackberries.
What you'll need:

- 125g Plain flour (gf)
- 1tsp Baking powder (gf)
- 150ml Almond milk
- 1 Large egg
- 1 Small-medium banana
- Pinch of salt
- Oil
-Toppings: Co-Yo, Blackberries, Agave Nectar or Maple Syrup

How to make:

> Combine the flour, baking powder and salt in a large mixing bowl
> In a separate bowl or jug mix together the almond milk, egg, and mashed banana
> Pour the liquid mix into the dry and beat into a smooth batter
> Heat a frying pan with a little oil and add in the batter to about 7-8cm circular pancakes
> Cook until little bubbles start to appear, once these show, flip the pancake over to cook until golden brown on both sides
> Serve up with plenty of syrup, some yoghurt and fruit compote - Or whatever you like!
