It can be tricky to find gluten free canapes that aren't completely dry or boring so I'm making my own! I love catering for events and playing the 'hostess with the mostest' and it's a lot easier than to create your own canapes than people may think - You can also rack up quite a bill by buying ready made Christmas canapes from supermarkets (they tend to up those prices around this time of year so be careful...)
I used to always make puff pastry parcels with my Mum when we were preparing canapes for Christmas events or if she was entertaining a dinner party so I had to re-create these with Genius gluten free puff pastry. So easy to make, but brie and cranberry is such a classic combination for Christmas canapes and goes so nicely with the fluffy puff pastry.
I love pate but it really is only something I have on special occasions; Well, this is that occasion! It doesn't get more special than Christmas so I'm going all out. I've toasted some Brown Farmhouse bread, bruschetta style in a little olive oil and popped in the oven for around 10-15 mins. Let them cool slightly before topping with a dollop of pate (I used duck) and a fresh orange segment.
Now, no Christmas occasion would be the same without some homemade mince pies! So, I've used their shortcrust pastry to create these little festive delights.
