Vanilla, Cashew Coconut Bliss Balls


I am 100% guilty of having a sweet tooth and sometimes find it difficult not to reach for the slightly less healthy options (... chocolate I am talking to you!) but usually instantly regret it and feel the consequences usually a couple of hours later or in the next couple of days when my skin flares up in horrendous break-outs. So, to help my dear little sweet tooth and cravings I have made these delicious vanilla, cashew and coconut bliss balls. Simple to make, the ingredients don't break the bank and you can make a batch for the week ahead for all those moment when you need something sweet to nibble.



What you'll need:
-100g dates
-50g cashews
-50g almonds
-1/2 vanilla pod
-Desiccated coconut
-1/2 tbsp coconut oil
-1/2 tbsp agave nectar

How to make:
>Place the dates into a food processor and blitz until it forms a sticky date paste with a smooth consistency
>Add in the cashews and pulse until all broken down, followed by the almonds and pulse again
>Scrape the inside of the vanilla pod and place into the mix
>Add in the melted coconut oil and agave nectar
>Give it a good mix or pulse again for a few seconds to fully combine
>Take about a tablespoon and roll using your hands. Pour the desiccated coconut onto a plate/surface then roll the ball so it is fully covered with coconut

These are perfect to take with you on the go and are really quite more-ish (you have been warned..)
