Rainbow Grill Salad

Summer is finally showing it's little sunny face so, to me, that means whipping up quick and easy salads that are full of flavour and colourful! Why spend hours slaving away in the kitchen when you can be soaking up the sunshine!

What you'll need:
-Spinach leaves
-Orange pepper
-Red pepper
-Mini courgettes
-Asparagus spears (x3)
-Handful of fresh basil leaves
-1tbsp Tigernut oil / olive oil

How to make:
>Pan fry 3 pieces of halloumi until golden brown
>Pan fry the asparagus and courgettes
>Slice up peppers and throw on top of some spinach leaves, along with the cooked halloumi, asparagus and courgettes, then sprinkle with the pomegranate.
>Finish by making the basil oil - Place the basil leaves and oil with seasoning into a nutribullet or use a hand blender until it forms a sort of pesto. Drizzle all over the greens and grills then serve up.

Perfect for making in large quantities for those Summer BBQ's with friends and family.
