Pea & Spinach Fritters

I love breakfast and that's no secret really... So, when it comes to the weekends I see it as a real opportunity to cook up something different and tasty. Unless you are fortunate enough to work from home or have a canteen at work, it's tricky to not get stuck into a bit of routine of having something quick and easy - my go to option is usually some dairy free yoghurt with fruit and granola, but that can get fairly boring to say the least. You can even make these the night before to take into work with you... so here's the recipe:

What you'll need (Makes 4 large fritters):
-200g peas
-100g gluten free plain flour
-1/2 tsp gluten free baking powder
-1 large egg
-1/2 lemon juice
-A handful of spinach leaves
-A splash of almond milk (about a tbsp)
-Oil for frying (I used rapeseed oil but you could use coconut oil)

How to make:
Using a food processor / blender - place about 1/3 of the peas into the blender along with the flour, baking powder, egg, lemon juice, spinach and milk and pulse until you have a thick smooth mixture (you may need to stir in between pulsing to make sure all elements are incorporated evenly). Once all combined, add the rest of the peas and fold into the mixture. Take a large spoonful of the mixture and shape into a patty using your hands or simply dollop the mix directly onto the pan and flatten. Leave to cook on each side for around 4 minutes each. Once brown on each side, remove from the pan and serve up with some rocket leaves and a poached egg / soft boiled egg / fried egg - the choice is yours! Squeeze over some fresh lemon juice, sprinkle with some sunflower seeds and drizzle over a little olive oil. Quick, easy & delicious!
