Orange & Almond Polenta Cake

I'm not sure about you but oranges always remind me of Christmas time and that warm, fuzzy, festive feeling! So, what better way to celebrate oranges than in cake, of course! This recipe was inspired by a lemon polenta cake I used to get from Borough Market when I was working right next to it (dangerous I know). I love the texture of this cake, it's so light and fluffy and the zing of orange throughout makes it just an all round winner really! Hope you like it as much as I do...

What you'll need:
-300g butter, softened
-300g caster sugar
-Finely grated zest of 1 large orange and the juice
-4 eggs
-300g ground almonds
-150g polenta (cornflour)
-1tsp baking powder

-Finely grated rind and juice of 1 large orange
-75g caster sugar
-Icing sugar for dusting

How to make:
Pre-heat your oven to 180 fan.

> Grease a 23cm round baking tin and line with baking paper
> Put the butter, sugar and orange rind in a large bowl and beat with an electric hand whisk until pale and creamy. Gradually whisk in the eggs, then add the ground almonds, polenta, orange juice and baking powder and carefully fold until thoroughly mixed.
>Spoon into the lined tin and level the surface. Bake in the oven for around 1 hour 15 mins or until a skewer inserted in the middle of the cake comes out clean and the sponge is golden brown. If the top of the cake gets too brown before then, cover with some foil to prevent from burning.
>Heat the orange juice and rind, sugar and a splash of water in a small pan, continuously stirring over a low heat. Allow to simmer until nice and syrupy. Prick the cake all over with a skewer, spoon the hot syrup over the cake and leave to cool completely in the tin.
> Remove from the tin, transfer to a plate and dust with icing sugar, slice up and tuck in! (drizzle with cream too for extra yumminess)
