Newburn Bakehouse - Warburtons: Festive Bread & Butter Pudding

When Newburn Bakehouse by Warburtons sent me some of their gluten free products to try I couldn't wait to make this festive bread & butter pudding using their new breakfast artisan cob with sultanas and orange. I created this dairy free & gluten free pudding for their Christmas advent calendar which can be found on their Facebook - go check it out for lots of festive treats and to see their other great gluten free products.

What you'll need:

-Newburn Bakehouse breakfast artisan cob with sultanas & orange
-Dairy free margarine
-500ml almond milk
-2 eggs
-1tsp cinnamon
-Grated nutmeg
-Light brown sugar
-A large handful of sultanas
-Zest of 1 large orange

How to make:
Pre-heat your oven to 180 fan & lightly grease a baking dish

>Start by slicing up the cob into about 1cm thick slices then cutting in half and buttering (rather generously).

>Layer the pieces of bread in the dish, slightly overlapping in places. Sprinkle all over with the light brown sugar and sultanas.

>In a mixing bowl whisk together the eggs, almond milk, cinnamon, nutmeg and orange zest then pour the mixture over the bread evenly.

>Allow the bread to soak up the liquid for around 10 minutes before placing into the oven to bake for around 30 mins. Check the pudding after about 15-20 minutes to check none of the top is catching. If so, cover with some tin-foil and place back into the oven for the remaining time.

>Serve up a big spoonful with some hot custard and enjoy with friends or family.
