Truffle & Rosemary Baked Chips

Winter is very much upon us, which to me means creating hearty comforting dishes and snacky side dishes like this one. I'm personally a huge fan of anything with truffle oil on so including it on a batch of hot, fluffy, crispy chips seems like the next logical recipe idea! So here it is and here's what you'll need:

What you'll need:
-Baking potatoes
-Fresh rosemary
-Truffle oil (Sainsburys do a great one for only £2.50 called La Espanola)
-Salt & pepper for seasoning

How to make:
Pre-heat your oven to 180 fan

> Start by washing & peeling the potatoes then cutting into chip pieces

> Then place the cut potato chip pieces into a large pan of boiling water to parboil - this should take around 7 mins or so (or until soft).

> Once soft, drain the water and place onto a baking tray along with a good drizzle of truffle oil and some finely chopped up rosemary as well as few whole sprigs of rosemary too. Season with salt & pepper, give the tray a good shake to make sure the oil is evenly covering the potatoes.

> Place into the hot oven and bake for around 20 minutes or until nicely crisp and golden.

I've got to say, I love these a little too much and have already baked a good few batches for friends & family!
