Chilli, Lime & Parsley Cod

Ever get so stuck in a routine of coming home from work and cooking the same meals over and over again? I know I am very much guilty of doing that, because hey, it's easy! But, I know I am also one to get extremely bored of eating the same thing over and over again. This is such a quick and easy meal and although the flavours are simple they are delicious.

What you'll need:
-1 Cod fillet
-Fresh lime
-Chilli flakes
-Fresh flat parsley leaves
-Baby potatoes
-4 Asparagus spears
-Rocket leaves (about a handful)

How to make:
Pre-heat your oven to 180 fan.

> Start by placing the baby potatoes into a pan of boiling water with a pinch of salt and cook until soft. Once done, allow them to cool ever so slightly before slicing up and setting to one side.

> Then place the piece of cod on a sheet of tin foil on a baking tray and squeeze some lime juice over the fish, sprinkle on some chilli flakes, some fresh chopped parsley leaves and season with some salt & pepper. Place in the oven for about 20 mins.

> Next, heat up a frying pan, add in a little drizzle of olive oil and lightly fry the slices of potato along with the asparagus.

> Plate up with some fresh rocket leaves, another squeeze of fresh lime and some extra chilli flakes if you fancy.
