Tomato & Pesto Puff Pizzas

I used to love making puff pastry tarts when I was at University, so I was thrilled to see that Genius have created a gluten free puff pastry! These puff pastry pizzas are so easy to make and are delicious.

What you'll need:

-Genius gluten free puff pastry (can be found in the freezer section in the supermarket)
-Cherry tomatoes
-Sacla gluten & dairy free pesto
-Dairy free cheese / lacto free cheese
-Spinach leaves

How to make:
Pre-heat your oven to 180 fan

Start by rolling the puff pastry out and then cutting into shape (circular/square - up to you), use some gluten free flour to help it not to stick if need be. Line a baking tray with some non stick parchment paper then place the pastry onto the tray. Top the pastry with a dollop of pesto, some spinach leaves, some sautéed cherry tomatoes and top with a little grated cheese. Cook in the oven for 15-20 minutes until lightly golden. Drizzle with a little olive oil and pesto then serve up on a bed of salad and enjoy!
