Potato Salad, Courgetti & Salmon Bowl

It's the simplest of dishes that are sometimes the tastiest - this is the perfect edition for lunches or light dinners. It's easy to make and will keep you fuller for longer.

What you'll need:

-A handful of baby potatoes
-A handful of fresh spinach leaves
-1 courgette
-1 salmon fillet / can either buy it fresh to cook or already cooked
-A wedge of lemon
-Dairy free mayonnaise (I use Granovita)

How to make:

Start by boiling the baby potatoes until soft, drain the water and leave to cool for a while before slicing up and mixing in some mayonnaise, add some seasoning (some fresh herbs if you fancy it too for some extra flavour) and a squeeze of lemon. If you're using a fresh salmon fillet, then either poach or lightly fry on a low heat at this stage. Using a spiralizer, make your courgetti then simmer in a pan to soften it up a little. Place the spinach leaves into a bowl / onto a plate, top with the soft courgetti curls, pile up the potato salad, add the salmon and top with a slice of lemon. Enjoy!
