Matcha Green Tea & White Chocolate Cookies

What you'll need:
-1tbsp matcha green tea powder by Rawbear
-200g ground almonds 
-50g ground pistachios
-175g dairy free White chocolate 
-3tbsp coconut oil
-3tbsp maple syrup 
-1tsp vanilla paste
-Pinch of salt
-1/2tsp baking powder (gf)

How to make:
Pre-heat your oven to 170 fan. 

Start by whizzing up the pistachios in a nutribullet / food process until you have a flour like consistency. Then melt the coconut oil until all dissolved. Chop up about 3/4 of the White chocolate into small chocolate chip sizes and save the rest for later to melt. Place all the ingredients into a mixing bowl and mix until fully combined and the White chocolate chunks have mixed through evenly. Once you have your mixture, line your baking tray with parchment paper, then take a heaped tablespoon of the mix and mould into small balls, then press down to form more of a circular cookie shape. Evenly spread out the cookies on the tray then place in the oven for about 10 minutes. Keep an eye on them so they don't burn or catch on the sides. Allow to cool before using the rest of the white chocolate (melted over a Bain Marie) to drizzle across. Allow to set for a few minutes then tuck in, serve with a cold glass of almond milk or a hot coffee.
