Rich Dark Chocolate Cookies

These are my absolute ultimate go to sweet treat favourites. I love how easy they are to make and how delicious and rich they are. The dark chocolate intensity is perfect for satisfying those sweet cravings.

What you'll need (makes 12 small cookies) :

-150g dates
-150g dark chocolate (70% or above for dairy free)
-200g ground almonds
-150g dairy free butter
-1/2tsp gluten free baking powder
-Pinch of salt

How to make:
Pre-heat your oven to 180 fan

You will need a food processor to help you with this. Using a really sharp large knife, chop up the dark chocolate into small chunks (chocolate chips) and set to one side for later. Start off the cookie mixture by blitzing up the dates in the food processor until they have broken down into a sticky paste. Then add in the butter, pulse it so it all mixes together. Next add in the ground almonds along with the baking powder and salt, pulse again until combined with the dates and butter. Empty the mixture out into a bowl and add in the chocolate chunks, mix them in so they are distributed evenly. Take a spoonful of the mixture and roll it into a ball using the palms of your hands. Lay out a onto baking tray with enough space between each one and bake for around 10-15 minutes. They will still be relatively soft once they come out of the oven so allow to cool for a good 10 minutes or longer, but if you can't wait then tuck in whilst they are all warm and gooey.
