What you'll need:
-Fresh mint leaves (about 1 stalks worth)
-1 Whole broccoli
-Peas
-Gluten free pasta
How to make:
You will need a nutribullet / food processor to make the sauce.
Start by cutting up the broccoli into small pieces, including the stalk, place into a large saucepan with some boiling water and cook until soft. Boil some peas and the pasta at the same time too. Once the broccoli and peas have cooked, set some aside to accompany the pasta then place the cooked stalk and veg into the nutribullet along with the mint leaves and a splash of water - whizz up into a thick sauce/paste. Pour the sauce over the pasta, give it a good mix together and add the broccoli pieces and peas with some pine nuts, a drizzle of olive oil and some salt and pepper to finish.
Enjoy hot or cold as either an on the go lunch or a comforting dinner.
