Chicken, Apricot & Quinoa Salad


I must admit, this was inspired by a recent talk I attended at my place of work which focussed on the effect of blood sugars on mental concentration, emotional balance and physical performance. Such a delicious dish and so quick and easy to throw together.


What you'll need:

- Red & White quinoa
- 1 chicken breast
- A couple of dried apricots
- A handful of flaked almonds
- Splash of olive oil and salt & pepper
- Rocket leaves
- Balsamic glaze (optional)

How to make:

There really is very little you need to do in order to create this simple salad. You can either use some already cooked chicken pieces (which is what I chose to do on this occasion as I had left overs from a roast) or cook a chicken fillet/breast and slice up. Throw in some quinoa with the olive oil, seasoning and rocket and give it a mix. Chop up the apricots and top with the flaked almonds. Drizzle some balsamic glaze over to finish then tuck in!
