Avocado, Quinoa & Black Bean Salad

The perfect light yet filling lunch - This quinoa, avocado and black bean salad is so delicious; the combination of the creamy avocado and quinoa is always a winner.

What you'll need:

-Salad leaves
-Black beans
-1 small ripe avocado
-A handful of cherry tomatoes
-Olive oil
-Fresh flat parsley leaves
-Lemon (for seasoning)

How to make:

Simply boil some quinoa until it has softened. Drain the water and mix in the black beans (I use canned black beans as they are already cooked and soft - make sure you give them a rinse first before using). In a separate bowl lightly mash up some avocado along with a drizzle of olive oil, seasoning and a squeeze of lemon. Chop up some parsley leaves and then add into the avocado bowl and mix. Slice up some cherry tomatoes. Simply place all the elements into a big bowl of salad leaves, drizzle with a little dressing / olive oil and tuck in!

So simple and delicious!
