Coconut & Vanilla Popcorn

Looking for a healthy sweet snack? Well, I have just the thing and it's pretty dreamy. This is my coconut and vanilla popcorn - it's super easy to make and will go down a treat for those cosy nights in-front of a movie.

What you'll need:
- 100g popcorn kernels (roughly)
- 2 tablespoons of Lucy Bee Coconut Oil (other brands available)
- Vanilla (can either use essence or vanilla pod)
- Agave nectar (The Groovy Food Company)
- Dessicated coconut

How to make:
Place the coconut oil into a large saucepan and heat on high until the oil has melted down. Add in some vanilla along with the popcorn kernels and cover with a lid. Then waiting until the popping starts, keep an eye on it to make sure it doesn't start to burn - shake the pan with the lid on to help keep things moving. Once the popping has stopped, empty out into a big bowl, drizzle a little agave nectar over and sprinkle with some dessicated coconut. Give it a little shake and start munching away.

Such a simple recipe and takes barely any time at all to make. Enjoy!
