Newburn Bakehouse - Warburtons: Festive Bread & Butter Pudding

When Newburn Bakehouse by Warburtons sent me some of their gluten free products to try I couldn't wait to make this festive bread & butter pudding using their new breakfast artisan cob with sultanas and orange. Orange & Almond Polenta Cake

I'm not sure about you but oranges always remind me of Christmas time and that warm, fuzzy, festive feeling! So, what better way to celebrate oranges than in cake, of course! This recipe was inspired by a lemon polenta cake I used to get from Borough Market when I was working right next to it (dangerous I know). I love the texture of this cake, it's so light and fluffy and the zing of orange throughout makes it just an all round winner really! Hope you like it as much as I do...

Pear & Blackberry Oat Crumble

I love winter and to me there is nothing better than a warming Sunday roast dinner followed by a crumble for pudding. What's great about this crumble is that not only is gluten free and also a healthy take on the original crumble, it takes barely any time at all to put together. It's even great for breakfast (that's if there's any left overs!) with a dollop of soya yoghurt or even coconut yoghurt.

Churros + Doisy & Dam Dark Chocolate Sauce

So, this week saw the first ever 'Batter Week' on The Great British Bake Off so I thought why not try my hand at making these naughties - Gluten free churros. Who knew it was possible? Well, it is and they are delicious. Crispy, sugary outside and a fluffy centre, finished off with the perfect accompaniment... A rich Doisy & Dam dark chocolate hot dipping sauce of course.

Nutri-Brex // Bloggers Breakfast

What a day and what a breakfast! I was absolutely honoured to be invited to the Nutri-Brex Bloggers Breakfast. The event was held at The Hoxton in their beautiful Garden Conservatory where we indulged in an amazing gluten-free spread. The event was held in order for Nutri-Brex to showcase their new and exciting product that has now launched and is available to buy in supermarkets.

I recently received these delicious and refreshing drinks by Vitness Tonics and was pleasantly surprised. The flavour combinations are great and not too sweet either, so it doesn't leave you feeling sick afterwards which most flavoured sparkling drinks do (well, I find that to be the case anyway). Available in 3 different flavours; Elderflower & Chilli, Rhubarb & Rose and Cucumber & Melon. My personal favourite is the Rhubarb & Rose flavour as it reminds me of rhubarb and custard.

Chia & Paprika Chicken Goujons With Asian Slaw

I had an unhealthy obsession with chicken goujons before I gave up gluten & dairy so it was only a matter of time before I decided to re-create them for myself. Although there are gluten free goujon options in shops such as Marks & Spencer, there's nothing like making them fresh from scratch - It only takes a short amount of time to make and it's seriously easy with little ingredients involved.

My Marathon

So here's some interesting news; I've decided to do My Marathon next month for The British Heart Foundation - having struggled with a rare form of heart condition (Postural Tachycardia Syndrome) for the past couple of years, I have finally built up the confidence, strength, health and fitness (eventually) to get back into keeping fit and exercising. Not only am I doing this for myself to prove I can achieve a significant exercise challenge but of course also for an absolutely amazing and worthy cause. This marathon is great for people who, like me, aren't natural runners or aren't in the best fitness shape - anyone can do this marathon and the best thing about it is you can do it at your own pace and whenever and wherever you choose. It consists of running / walking 26.2 miles, you can do it progressively over the month too, so no pressure to do it in a day! I'll be doing this with my 2 housemates - they have both been extremely supportive of me throughout my good days and bad days and they have been extremely encouraging in getting me back into fitness carefully and at my own pace (so, here's a little thank you to my 2 lovely personal trainers and best friends - you are the best!) I can't encourage you enough, try it for yourselves and feel amazing for doing so.

You've Got To Start Somewhere...

It's very easy to get into a habit of just slobbing on the sofa or lying in bed watching film after film but realistically it's no good for you in the long run. I've always wanted to get back into fitness since finishing school at 18 years old, don't get me wrong, I tried to go to the gym at University but it proved a lot harder than I expected - There was never enough time and the free time I did have I spent going out with friends so it was never a difficult decision when it came to gym vs. socialising. In my final year of uni it was impossible with the work load and I fell ill with a rare heart condition, so since that happened I've always been fairly reluctant to get back into any form of fitness. However, recently I have realised the importance of staying active and (trying) to get myself fit.

Super Seedy Granola

Making your own granola is super easy and is so much better for you; shop bought cereals contain seriously high levels of sugar. This way, you know exactly what goes into your granola and it will save you money too.
This is such an easy recipe and is great to make in big batches ready for whenever you need it. I make mine on a Sunday and divide it into healthy sized portions to take with me into work. Once made, store in an air tight jar or container to keep it fresh and tasting delicious!

It’s always far too tempting when you meet up with a mate for a coffee and a good old natter to pick up a slice of cake or a muffin on the side but with this new flavour, it's the perfect pairing with a coffee and it won't leave you feeling guilty afterwards. Banana & Blueberry Cake

Chicken, Apricot & Quinoa Salad

I must admit, this was inspired by a recent talk I attended at my place of work which focussed on the effect of blood sugars on mental concentration, emotional balance and physical performance. Such a delicious dish and so quick and easy to throw together.
