Stuffed peppers are such an easy meal to make and are filled (literally) with delicious flavours and textures. Of course you can choose different ingredients but I loved this combination.
What you'll need:
-1 pepper (red, orange, yellow, green - you decide)
-Brown rice & quinoa Tilda microwaveable pouch
-Chickpeas
-Sweetcorn
-Broccoli
-Olive oil
-Salt & pepper
-Hummus (Optional)
How to make:
Pre-heat your oven to 180 fan.
Wash the pepper, remove the stalk, de-seed & cut in half. In a bowl, mix together the rice & quinoa, chickpeas, sweetcorn and small pieces of broccoli with about a teaspoon of olive oil and some salt & pepper seasoning. Simply fill the peppers with the mixture, place onto a baking tray and wrap in some tinfoil to help steam the pepper. Cook for around 15 minutes then serve up with some hummus for extra flavour and a creamy texture to dip into.
