Creamy Cauliflower Mash

This is quite honestly the most delicious and creamy mash ever! I don't think that's an exaggeration but trust me, its so yummy. It is really simple to make and is a lot lighter than mashed potato, which can sometimes be very stodgey.

What you'll need:

-1 small cauliflower
-Olive oil dairy-free butter / Olive oil (I used the butter as it helps to create a creamy texture)

How to make:

Chop the cauliflower heads off the stalk and place in boiling water with some salt to season to water. Cook for around 5-7 minutes or until softened. Drain the water and place back into the pan along with a dollop of the dairy free butter. Use a hand blender to blitz up the cauliflower until it turns into a smooth mash, keep stirring and blitzing until you have reached an ultra smooth consistency. I served mine up with some herby salmon and fresh green beans. Absolutely delicious.
