Vibrant Rice Salad


Hello again from sunny France. Another day, another lunch with the family sat out on a terrace with beautiful views. Today we shared this rice salad along with some fresh meats and salad.

What you'll need:

-Basmati rice
-Chorizo slices
-1 red pepper
-1 tin of sweetcorn
-Salt & pepper for seasoning


How to make:

Similar to my last post, I like to find quick ways of making something delicious. This time I used some uncle benz microwavable basmati rice pouches (x2), which you just bung in the microwave for 2 minutes - so easy and they create nice fluffy rice which is also gluten free. Whilst those cook, chop up the chorizo into small pieces and place into a frying pan on a low heat, fry for a few minutes, until nice and crispy. Chop up the red pepper into small chunks. Once all your ingredients are cooked and prepped, mix them all together in a big bowl with some salt & pepper and there you have it. A simple tasty rice salad that has some lovely contrasting flavours going on.
