Ham Hock & Avocado Open Sarnie

Lunches are always a tricky one, sometimes I'll still be relatively full after a big bowl of porridge in the morning, so wont fancy a big lunch but still want something to satisfy the lunchtime hunger and keep me going during the afternoon. An open toasted sandwich seemed to be the perfect solution as it was lighter.

What you'll need:

-1 ripe avocado
-Seeded bread (1-2 slices; I used Genius brand)
-Fresh spinach leaves
-Ham hock (pre-prepared from Waitrose)
-Olive oil, Salt & Pepper for seasoning

How to make:

Very simply, lightly toast the bread and mash up half of the avocado. Spread the mashed avocado onto the toast, then layer up with the spinach leaves, ham hock and some more avocado. Finish with a drizzle of olive oil and some salt & pepper to season.

I used a knife and fork to tuck into this, but if you prefer; make it into a proper toastie by adding a top, cutting in half, picking up and eating. Either way, it's so delicious.
