Paella Hot Pot


I seem to have acquired a serious love for paella inspired dishes since returning from my holiday in Spain. So here's a paella inspired dish that my friend & I decided to cook up; we fancied something quick, easy and comforting for lunch today as it was looking rather glum outside. Here's the recipe:



What you'll need:
(Makes enough for 6 persons (roughly))

-1 cup paella rice
-1 small white onion
-Chopped chorizo
-2 large tomatoes
-1 tin of cannellini beans
-1 cup of frozen peas
-About a handful of green beans
-Olive oil
-Salt & Pepper

How to make:

Place the paella rice in a saucepan with boiling water and simmer for about 10 minutes until the rice has softened.
Dice the white onion and sweat in a large hot pan with olive oil. Once softened, add in the chorizo and cook for a few minutes together. Add in the tomatoes followed by the cannellini beans, frozen peas and green beans. Season with salt & pepper and if you fancy spicing it up add in some chilli flakes. Add in a splash of hot water along with the cooked paella rice and allow all the flavours to infuse together by simmering on a low heat for around 10 minutes, whilst stirring every so often. After those 10 minutes, leave to stand for a further 10 minutes then serve up. Makes plenty to have left overs for lunch the next day, enjoy hot or cold!
