Courgetti, Salmon & Greens

On the odd chance of a lovely English summers evening I always feel like I need to make the most of it and by that I mean making something really light and delicious that I can enjoy outside. This courgetti dish is exactly that.

I have to say this is one of my favourite courgetti dishes (so far) - I'm sure I will continue to create courgetti dishes that will out do the other one and the one before that! I hope you like this as much as I do, and what's great is it requires very little time & effort. So here it is:

What you'll need:

-1 courgette
-A handful of green beans
-A handful of fresh asparagus
-1 fillet of poached salmon (can be bought already poached from supermarkets such as Waitrose and M&S)
-1tsp olive oil
-Salt & pepper for seasoning

How to make:

Using a spiralizer, create your courgetti and place into a non-stick pan with the olive oil and salt & pepper, add a tiny splash of hot water too, this will help the courgetti to soften. Alternatively, you can enjoy courgetti cold. Whilst the courgetti simmers on a really low heat, place the green beans and asparagus into a pan of boiling water and cook until soft but still crunchy. Once cooked, drain the water and add the veggies to the courgetti. Place them into a big bowl along with the poached salmon, give it a good mix and tuck in!

Such an easy recipe but so delicious.
