Carrot & Quinoa Salad

This vibrant and colourful quinoa dish is so tasty and is really easy to throw together - it makes for the perfect side dish to any meal, or simply enjoy a big bowl on its own. I served this up with some oven roasted chicken thighs for dinner but it would also be great for on the go lunches.

What you'll need:

-Red & White quinoa (either ready made pouch or boil some)
-1 large carrot
-A handful of baby kale
-A handful of sultanas
-Olive oil
-Salt & pepper for seasoning

How to make:

I like to use the microwaveable ready made red & white quinoa pouches as they can be eaten hot or cold. Empty half a packet into a bowl along with some grated carrot, the sultanas, add in a splash of olive oil and some salt & pepper. For the baby kale I like to cook it in the oven with a drizzle of olive oil and seasoning for around 5 minutes at 180 fan, this just helps to crisp it up and is so tasty. Add to the rest of the mix, stir together and enjoy!
