Smokey Paprkia Sweet Potato Crisps

These sweet potato crisps are so yummy and it is far too tempting to just eat the whole batch in one sitting. They're so easy to make as well. So here's how:

What you'll need:

-1 large sweet potato
-2tsp smoked paprika
-Sunflower oil
-Salt for seasoning

How to make:
Pre-heat your oven to 190 fan

Firstly you will need to wash the sweet potato to get off any dirt, then dry with paper towel. Then, using an extremely sharp large knife thinly slice the potato. It is important to get really thin slices for this otherwise you will end up with soggy crisps or chips - which of course will still taste great but you wont get that crunch required for crisps. Once you have your thin slices, place them onto a large baking tray with a drizzle of sunflower oil and the smokey paprika. Mix on the tray using your hands so that each piece gets some flavouring and a coating of oil. Place into the oven for about 10-15 minutes, keeping a close on eye on them every so often. Give them a quick shuffle around on the tray and pop back into the oven for a further 5 minutes (if necessary) to crisp them up. Once crispy, remove from the oven and place them onto some paper towel to help soak up any excess oil - Leave to cool for about 5 minutes, sprinkle with some salt and tuck in!
Serve up with some hummus or guacamole and enjoy!
