Courgetti With An Avocado Cream & Mushrooms


This was one of the first courgetti dishes I made upon changing my eating habits. The avocado cream works so well as a sauce for the courgetti and adding veggies and the crunch of some pine nuts makes for a really tasty dish.



What you'll need:

-1 courgette
-1 ripe avocado
-1 portobello mushroom (or can alternatively use a few small mushrooms)
-About a cup of petite-pois peas
-A handful of pine nuts

How to make:

Start by chopping up the mushroom(s), then place into a non-stick saucepan along with a drizzle of olive oil. Once they have browned slightly add in your courgetti (created by using a spiralizer), the juices from the mushrooms will help the courgetti to soften. Whilst that cooks on a low heat, simmer some peas in a separate pan. Then, chop up your avocado and place into a bowl, use a fork to mash it up. Combine the mushrooms, courgetti, avocado cream, peas and pine nuts all together, give it a mix and serve up!
