Pasta & Greens

Sometimes all I fancy for lunch is a big bowl of pasta and what better way to enjoy it than with some fresh tasty greens. This is so quick and easy to make as well, what more could you possibly want?

What you'll need:

- Gluten free pasta (any - I used fussili)
- 2 handfuls of spinach
- Peas
- 1/2 Avocado (must be ripe)
- 1tbsp Hummus

How to make:

Simply boil the pasta and some peas (in seperate saucepans as they take slightly different amounts of time). Once both have cooked drain the water and place both back into one of the saucepans. In a seperate bowl, mix together the avocado (mashed up) with the hummus, add salt & pepper for seasoning. Then, add the sauce and some spinach to the pasta and peas, give it a really good mix so that all the pasta gets some of the sauce on it. Mixing the spinach in whilst still in a hot saucepan will allow it to wilt (pop it over a low heat if it doesn't start to wilt). Once it has had a good mix serve in a big bowl and tuck in!
